Carrot And Raisin Salad

3 cups grated carrots 1 cup chopped celery 2/3 cup raisins 1/2 cup chopped pecans 2 tbsp chopped parsley 3/4 cup mayonnaise 1 tbsp sugar 1 tsp grated orange rind 1/2 tsp salt In large bowl, combine all ingredients in the order given. Toss lightly with a fork.

Hot Chicken Salad

1/4 cup mayonnaise 1/8 cup onion 3/4 cup shredded cheddar cheese 3 cups chicken, cooked and diced 1 1/2 cups celery, sliced 1 1/2 cups pineapple chunks, drained 3/4 cup almonds, toasted and chopped Combine mayonnaise, onions and toss with remaining ingredients. Garnish with crushed potato chips. Bake at 400° for 10 minutes

Orange Carrot Salad

3 cups shredded carrots 2 medium oranges peeled 3 tbsp lemon juice 1 tbsp sugar dash salt Place carrots in a medium bow. Section oranges into bowl to catch juices. Add remaining ingredients and mix well. Chill for several hours. 4-6 Servings
