- 8 boned & skinned chicken breast halves
- 1/3 cup fresh lemon juice
- 2 Tbsp. grated lemon peel
- 1 clove garlic, minced
- 2 Tbsp. thyme
- 1 tsp. salt
- 1 tsp. fresh ground pepper
- 2 lemons, thinly sliced
- Place chicken in a bowl or casserole. Mix together lemon juice, lemon peel, garlic, thyme, salt & pepper. Pour over chicken.
- Marinate in refrigerator for at least 3 hrs.
- Remove chicken from marinade & place in shallow baking dish.
- Pour marinade over chicken & bake for 30 – 45 min. or until cooked through. Bake at 350. Garnish with lemon slices.
