  • 1/2 pound hot Italian sausage
  • 1/2 pound smoked ham, cubed
  • 1 large onion
  • 1 large green pepper
  • 1 cup chopped celery
  • 2 tbsp tomato paste
  • 1/4 cup parsley
  • 1 1/2 tsp thyme
  • 1 quart oysters
  • 1/2 cup smoked sausage
  • 1 tbsp bacon fat
  • 4 cloves garlic
  • 1 bay leaf
  • Two 1 pound cans of tomatoes
  • 5 chopped scallions
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 2 lb peeled raw shrimp
  • 6 cups hot cooked rice
  1. In very large skillet, combine sausages, ham bacon fat, onion, pepper, garlic and celery. Cook till veggies are tender.
  2. Add tomatoes, paste, scallions, parsley, paprika, chili powder, bay leaf, thyme, salt and pepper. Simmer for 15 minutes.
  3. Stir in shrimp and oysters and simmer for a few more minutes.
  4. Add rice and mix well.
  5. Place in casserole in warm oven until ready to serve.
