- 4 eggs
- 1/2 cup raisins
- 1 1/3 cups brown sugar
- 1/2 cup butter melted
- 1 tbsp lemon juice
- 2 1/4 cups of flou
- 2 tsp baking power
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 3 cups of grated carrots
- Beat eggs and brown sugar, stir in melted butter and lemon juice,
- Combine flour, baking powder, baking soda, cinnamon, salt and nutmeg; sift into egg/sugar mix.
- Stir in carrots and raisins.
- Pour into greased and floured Bundt pan. Bake at 350° for 1 hours.
- Spread with cream cheese frosting (see below).
Cream Cheese Frosting
- 1 package (3 oz) cream cheese
- 1 tbsp lemon juice
- 1 1/2 cups confectioners sugar
Blend cream cheese and lemon juice. Slowly add sugar and beat until smooth.
