  • 4 eggs
  • 1/2 cup raisins
  • 1 1/3 cups brown sugar
  • 1/2 cup butter melted
  • 1 tbsp lemon juice
  • 2 1/4 cups of flou
  • 2 tsp baking power
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3 cups of grated carrots
  1. Beat eggs and brown sugar, stir in melted butter and lemon juice,
  2. Combine flour, baking powder, baking soda, cinnamon, salt and nutmeg; sift into egg/sugar mix.
  3. Stir in carrots and raisins.
  4. Pour into greased and floured Bundt pan. Bake at 350° for 1 hours.
  5. Spread with cream cheese frosting (see below).

Cream Cheese Frosting

  • 1 package (3 oz) cream cheese
  • 1 tbsp lemon juice
  • 1 1/2 cups confectioners sugar

Blend cream cheese and lemon juice. Slowly add sugar and beat until smooth.
