  • 1 large head of cauliflower, cut into florets
  • 1 cup frozen corn
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 1 1/2 cups cheddar cheese, shredded
  • salt and pepper, to taste

Step 1

Preheat the oven to 350 degrees F. Bring a large pot of water to a boil. Add the cauliflower and boil it for 5 minutes, allowing it to soften. With 1 minute remaining, add the frozen corn. Drain the vegetables and set them aside.

Step 2

In a medium-sized saucepan, add the butter over medium-high heat. Add the flour, stirring until completely smooth. Add the milk and 1/2 cup of cheese, then continue stirring until the cheese is melted and the sauce thickens up.

Step 3

Add the cauliflower and corn to a medium-sized casserole dish. Pour the cheese sauce over the vegetables, mixing it so the cheese covers everything. Sprinkle it with salt and pepper to taste, then add the 1 cup of remaining cheddar cheese on top.

Step 4

Place the casserole in the oven and bake for 30 minutes. After 30 minutes, turn the oven to broil and bake (while watching it) for 2-3 minutes, or until the cheese is lightly browned.
