  • 3 cups diced cooked chicken
  • 1 cup of cream of chicken soup
  • 2 cups thinly slice celery
  • 1/2 cup of pimento
  • 3 tbs lemon juice
  • 1 cup slivered almonds
  • 3 tbs grated onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2/3 cup of mayonnaise
  • 3 chopped hard boiled eggs
  • 1 cup crushed potato chips
  • 1/2 cup shredded cheddar cheese
  1. Heat chicken soup and chicken over low heat till hot. Add all ingredients, toss with fork.
  2. Pour into casserole. Top with one cup crushed potato chips and 1/2 cup cheddar cheese.
  3. Bake until bubbly – 400° for 20 minutes
