- 3 cups diced cooked chicken
- 1 cup of cream of chicken soup
- 2 cups thinly slice celery
- 1/2 cup of pimento
- 3 tbs lemon juice
- 1 cup slivered almonds
- 3 tbs grated onion
- 1/4 tsp salt
- 1/4 tsp pepper
- 2/3 cup of mayonnaise
- 3 chopped hard boiled eggs
- 1 cup crushed potato chips
- 1/2 cup shredded cheddar cheese
- Heat chicken soup and chicken over low heat till hot. Add all ingredients, toss with fork.
- Pour into casserole. Top with one cup crushed potato chips and 1/2 cup cheddar cheese.
- Bake until bubbly – 400° for 20 minutes
