  • 8 boned & skinned chicken breast halves
  • 1/3 cup fresh lemon juice
  • 2 Tbsp. grated lemon peel
  • 1 clove garlic, minced
  • 2 Tbsp. thyme
  • 1 tsp. salt
  • 1 tsp. fresh ground pepper
  • 2 lemons, thinly sliced
  1. Place chicken in a bowl or casserole.  Mix together lemon juice, lemon peel, garlic, thyme, salt & pepper.  Pour over chicken.
  2. Marinate in refrigerator for at least 3 hrs.
  3. Remove chicken from marinade & place in shallow baking dish.
  4. Pour marinade over chicken & bake for 30 – 45 min. or until cooked through.  Bake at 350.  Garnish with lemon slices.
