- 1/2 pound hot Italian sausage
- 1/2 pound smoked ham, cubed
- 1 large onion
- 1 large green pepper
- 1 cup chopped celery
- 2 tbsp tomato paste
- 1/4 cup parsley
- 1 1/2 tsp thyme
- 1 quart oysters
- 1/2 cup smoked sausage
- 1 tbsp bacon fat
- 4 cloves garlic
- 1 bay leaf
- Two 1 pound cans of tomatoes
- 5 chopped scallions
- 1 tbsp paprika
- 1 tsp chili powder
- 2 lb peeled raw shrimp
- 6 cups hot cooked rice
- In very large skillet, combine sausages, ham bacon fat, onion, pepper, garlic and celery. Cook till veggies are tender.
- Add tomatoes, paste, scallions, parsley, paprika, chili powder, bay leaf, thyme, salt and pepper. Simmer for 15 minutes.
- Stir in shrimp and oysters and simmer for a few more minutes.
- Add rice and mix well.
- Place in casserole in warm oven until ready to serve.
