- 3 3/4 cups flour
- 1 teaspoon baking powder
- 1 cup butter — softened
- 1 package cream cheese, softened — (8 oz)
- 2 cups sugar
- 1 egg
- 1 tsp vanilla
- 1/4 almond extract
- 1/4 teaspoon coconut flavoring
- miniature chocolate chips or red cinnamon candies
- 3/4 cup powdered sugar
- 2 tsp mlk
- In a medium mixing bowl stir together flour and baking powder. Set aside.
- In a large mixer bowl beat butter and cream cheese with an electric mixer on medium speed for 30 seconds. Add sugar; beat till fluffy
- Add egg, vanilla, almond extract, and coconut flavoring; beat well
- Gradually add flour mixture to creamed mixture, beating well after each addition.
- Cover and chill overnight
- For each snowman, shape dough into 3 balls; one 1-inch, one 3/4-inch, and one 1/2-inch ball. Place balls on an ungreased cookie sheet in decreasing sizes with sides touching. Press together slightly.
- Press 2 miniature chocolate chips in smallest ball for eyes. Press 1 red cinnamon candy in middle ball and 2 candies in largest ball for buttons.
- Bake in a 325 oven about 18 minutes or till edges are firm and bottoms are light golden brown. Cool 1 minute on baking sheet. Carefully transfer to a wire rack; cool.
- To make the icing for decorating the cookies, in a small mixing bowl stir together the 3/4 cup powdered sugar and enough milk or light cream (2-3 teaspoons) to make an icing of piping consistency.
- Stir in green food coloring.
- To make hats for the snow people attach halved kisses or peanut butter cups to the heads with icing.
- Lightly sprinkle with powdered sugar before serving.
