SALAD

  • 6 ounce package of baby spinach, washed and dried
  • 1 pint fresh strawberries, washed and sliced
  • Sweet onion, such as a red onion or Vidalia, sliced thinly to taste
  • Nuts such as sliced almonds or walnuts, toasted, amount to taste
  • Ripe avocado, pitted, peeled and diced

HOMEMADE DRESSING

  • 1/4 cup of fresh or frozen raspberries
  • 2 tablespoons of extra virgin olive oil
  • 4 teaspoons balsamic vinetar
  • 1 small clove of garlic, minced
  • 1/2 teaspoon of sugar
  • About 1/2 teaspoon salt, to taste
  • Dash of black pepper

For salad: Place desired amount of spinach, strawberries, sliced onion, nuts and diced avocado into individual salad bowls if serving just one or two persons. If serving more than two persons, place all salad ingredients in a large salad bowl.

For Dressing: Combine all salad dressing ingredients in a blender or food processor and process until smooth. Pour about 1 tablespoon of salad dressing over eache serving. Cover and refrigerate remaining salad dressing for use another day.

For Nuts: toast nuts in a small dry skillet over low heat stirring constantly until fragrant, about 3-5 minutes.

Makes: About 5 (1 1/3 cup) servings

Note: Salad may be made for one or two persons by placing amount of spinach and toppings into small, individual salad bowls. To save time with making dressing, use your favorite bottled vinaigrette salad dressing such as raspberry walnut vinaigrette.
